Auntie Ellyn and Uncle Todd's Chopped Salad - Caity


This is the really great salad that my Auntie Ellyn and Uncle Todd made at our New Mexico Walsh family reunion to serve with hamburgers, brats, hot dogs, etc.  It's a great salad that they said they copied from a restaurant in Illinois.  

 It’s full of delicious things, and the really unusual thing about it is that is has some pasta in it—I’ve never had that in a green salad and it was delicious.



what you'll  need:

Romaine lettuce, chopped bite-size

Cooked ditalini pasta (little round pasta that looks like cut up macaroni)
Blue cheese, crumbled
Chicken breasts, grilled or cooked and chopped
Bacon, cooked and crumbled
Tomatoes, cut up or grape tomatoes
Green onion, chopped—white and green parts
Salad dressing of choice—nice with Italian or something vinaigrette-ish. I had homemade Caesar in the fridge so I used that and it was great.


Combine all ingredients except dressing.  Toss with dressing just before serving.   

This is a good salad to keep for a few days and add dressing as you eat it, especially since it is so addicting and you kind of keep craving more.
