Boeuf Bourguignon - Caity

  Bouef Bourguignon. If you can say that without doing it in Julia Child's voice, you are a much more mature person than I. If you must do so in her voice, we obviously have a lot in common and I already like you a little bit more. If you have no idea what I'm talking about please watch this SNL skit as soon as possible.  Even if you've already seen it, watch it again!  Beyond all the laughs, Bouef Bourguignon is amazing and while this is not Julia Child's recipe, this classic French dish became popular in the US because of her. It's not just beef stew (which is also great in it's own category). Boeuf Bourguignon builds flavor from the base (meat cooked in bacon grease and deglazed with red wine, yum!). It is quintessential "cold weather" food, I know you'll enjoy it. What is even better is that it tastes better the day after - SO make it on a slow Sunday and save it for a busy weekday! Pancetta and Mushroom Stuffed Pork Loin - Caity

      If you only make one pork roast in your life, please, let this be it. It's soooooooooooooooo good! It's a nice pork roast stuffed with pancetta, mushrooms, bread crumbs and herbs then has porcini fennel salt sprinkled on the outside before being roasted to perfection. We just ate it last night and I already want to eat it again!  It is a little more work than your average pork loin (with the stuffing) but it is really worth the effort and deserves a place on your table this holiday season. Try serving with Roasted Fingerling Potatoes with Sage or your favorite risotto and Balsamic Asparagus with Parmesan with Panna Cotta for dessert. This recipe comes from Food 52 .  Note: Make sure you have butcher string! You don't want to substitute out of desperation (no blue soup like in Bridget Jones Diary-bleh). I was a lucky girl yesterday. I got to go to the DMV and hang out with all of the interesting people there while waiting to renew my tags. After 45 minutes of waiting and listening to the man sitting across from me tell me about how I shouldn't use my iPhone because the government was using it to spy on me, I was just a teensy bit grumpy and ready to go home. Also, it was getting close to lunch time and I was starving!  When I got home, I dug through the fridge looking for anything edible and non-moldy. Voila! Mushrooms on Toast! It's easy, filling and not too heavy. You can use any type of mushrooms you like: I happened to have button mushrooms and Chanterelle's on hand so that's what I used. It looks pretty to use a couple of different kinds, but tastes great with any type. It just about kills my mom when I tell her that I am cooking mushrooms for dinner. I refused to eat mushrooms nearly my entire life despite her best efforts. I would pick them out of anything she tried to hide them in. Now, I feel like I am playing catch up for all that I've been missing. Mushrooms are so good! I like choosing a couple of different types of mushrooms to put in the fettuccine because they all taste different, and they are all so pretty! The nurse practitioner I work with goes mushroom hunting on the weekends. The last time I made this pasta, I used a couple of chanterelles she had picked the day before. Mushroom Basil and Parmesan Orzo - Erin

This is just a variation of Brendan's Orzo with Parmesan and Basil that I made one night when I had a bunch of mushrooms to use up.  You could do it with whatever mushrooms you can find, but I love getting a range of different types and shapes.  My favorite place to find the weirder mushrooms is usually Asian stores, but some grocery stores have a good variety too, so you can just use whatever you can find! what you will need 3 Tbsp. butter 1 1/2 cups orzo  2 cups mushrooms, cut into bite-size pieces 3 cups chicken broth 1/2 cup grated parmesan cheese 6 Tbsp. fresh basil sliced Chiffonade style salt and pepper to taste

Grilled Lemon Chicken and Mushroom Flatbread Pizza - Erin

This was invented when I had some leftover chicken from the Grilled Lemon Chicken Salad , and wanted to find some way to use it.  I had also been to a middle eastern market that day, which has the most incredible Iraqui Flatbread that is baked fresh daily.  It's called Pars Market in Salt Lake, and their website is here , and they've got all sorts of awesome and different stuff if you're willing to try it!  I also got a mix of different mushrooms from the Asian markets, and I almost decided not to add the chicken at the last second because I was worried how it was all going to taste together, but I am very glad that I added it, because this pizza was delicious!  what you will need
