Mediterranean Seven Layer Dip - Erin
I was poking around on Pinterest the morning of the Super Bowl, trying to find something to bring to a party, and found this recipe from Cookin' Canuck. I changed a few things, mostly out of laziness, and it turned out absolutely delicious!
What you will need:
8 oz. hummus
2 medium tomatoes, diced and drained
1/2 cup shredded cucumber (drained, but don't worry too much about it)
1/2 cup greek yogurt (I used 2%)
1/8 tsp salt
1/4 tsp smoked paprika
1 jar artichoke hearts, chopped and drained
1 jar artichoke hearts, chopped and drained
2 orange bell peppers, diced
1/4 cup crumbled feta cheese
2 Tbsp minced flat leaf parsley
1/4 cup chopped kalamata olives
On a dinner-size plate, spread the hummus out into a circle, probably about 10" in diameter, and sprinkle the tomatoes and bell peppers on top of the hummus. In a cereal-size bowl combine the yogurt and shredded cucumbers. I didn't worry too much about draining the cucumber since it's being mixed with thick Greek yogurt; the extra liquid from the cucumbers thinned the yogurt out perfectly to make it more spreadable. Dollop the yogurt mixture onto the pile, and then spread it around with a spatula. Sprinkle the salt and smoked paprika on top, then layer the artichoke hearts, kalamata olives, and feta cheese. Add the minced parsley to top it off, and you're good to go!
I served it with bite-sized pieces of pita bread, and couldn't get enough of it! Easy, delicious, and definitely the healthiest thing I ate that day...
