Wild Rice Broccoli Casserole - Caity


This is the ultimate comfort food and so easy to make. It can be a great side dish or add some cooked rotisserie chicken and BAM! Main course! This delicious recipe comes from the "Best of the Best Cookbook" which also features other family favorites like Christmas Morning Breakfast Bake and Orzo with Parmesan and Basil

This is also a great "make ahead of time and bake when you're hungry" meal. Serves around 6 people. 




what you'll need:

1 6-oz package of Uncle Ben's Wild Rice Mixture
2 heads of broccoli, cut into florets
2 10-oz cans of condensed Cream of Mushroom soup
2 cups grated cheddar cheese
1/2 plus cup rotisserie chicken torn into smaller pieces(optional) 


Preheat the oven to 350 degrees F. 

Cook the rice as directed (this takes a while, so plan accordingly). 

Cook the broccoli several minutes in boiling water until bright green, but still crunchy. 

In a medium bowl, mix together the soup and 1 1/2 cups cheddar cheese. If you're adding chicken, add the chicken into the soup/cheese mixture. Grease a 9x13 casserole dish (really anything that is ovenproof works). OR you can put it two smaller casserole dishes and save one for later. 



Alternate soup mixture, rice and broccoli in layers. Sprinkle the remaining 1/2 cup of cheese on top. 


Cook at 350 for 1 hour (or microwave for 5 minutes if you're THAT hungry).
