Orange Creamsicle Cookies - Erin
I was wasting time bouncing around between cooking blogs when I found this recipe the other day from The Girl Who Ate Everything (here.) Orange Creamsicle Cookies, with orange zest and white chocolate chips. It sounded a little weird, but very delicious, so I made them instead of watching the Superbowl, and I'm pretty sure I made the right choice, haha!
what you will need
2 1/2 cups all purpose flour
1/4 tsp baking soda
1/2 tsp salt
2 sticks (1 cup) butter
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
1 tsp vanilla extract
1 Tbs. orange zest (about 2 oranges)
1 cups white chocolate chips (or vanilla chips, if you can find them)
Preheat your oven to 375F. Combine flour, baking soda and salt in a bowl and set aside. In a large bowl cream together sugars and butter until light and creamy. Beat in the egg and vanilla, and mix until smooth. Gradually add the flour mixture until combined, then add the orange zest and chips.
Drop rounded teaspoons of the dough onto ungreased cookie sheets, and don't flatten them or they'll dry out. I wold recommend keeping them on the smaller side, because they're pretty sweet, so you probably don't want too many massive ones. Bake about 10 minutes, until the cookies are just golden brown around the edges. My gauge was to pull them out as soon as the tops started to crack, but who knows! Let cool for a couple of minutes before transferring to a rack to cool completely, then store whatever you don't eat immediately in an airtight container!
