Tutu's Macaroni and Potato Salad - Caity

This is Tutu’s way (the best way!) of making a very standard dish in Hawaii.   Every picnic must have it; every plate lunch you buy has at least one scoop of it.   I think most versions use just macaroni, but this is so much more delicious and interesting.   As with most of Tutu’s recipes, she teaches you how to make it rather than giving you specific amounts—you’ll figure out how you like it.    When we would visit our family in Hawaii my mom always wanted to have a family picnic on her last night home, and Tutu was always nice enough to do it—usually at Ala Moana Beach Park over on the Magic Island-side where the cousins could swim in the shallow water and throw sand at each other, and she almost always made this salad.   It is best served with grilled Asian-style meats (like Kalbi Short Ribs or Kalua Pi g !) , rice, Tutu's Cucumber Kim Chee , Hawaiian-kind juice or soda—just before sunset on a beach in Hawaii with your family.  ...

Kalua Pig in the Crockpot - Caity

Kalua pig has always been one of my favorite types of pork. I had no idea it was so easy to make! We made a big batch for the Super Bowl and it was great to have a little taste of warmer weather. My mom has made this recipe for years and has had it in the Walsh Cookbook for a long time. Here is what she said about the recipe: "This is a wonderful recipe from a very dear friend of Tutu and Grandpa Walter's: Marie Bunton. Marie was a fabulous cook and an amazing, gracious hostess. Though elderly, she managed living alone for quite a few years after her husband George, one of Grandpa Walter's colleagues and close friends passed away. She continued to live for a long time in their beautiful home in Kailua that had a lovely yard and a pool where her cute dog liked to swim. Kalua pork is of course, meant to be served in the traditional Hawaiian way as part of a luau with poi.
